Our family tapped the two sugar maples in our yard last winter and made maple syrup from the sap. It was really fun, the syrup was better than any we'd ever tasted, and we felt a little bit like pioneers :) In researching how to do it, I came across a good little book called "Sugartime: The Hidden Pleasures of Making Maple Syrup With a Primer for the Novice Sugarer" by Susan Hauser. She discusses how Native Americans sugared and the importance of the maple tree to them. It is fascinating.
